Once Again Nut Butter #MomsMeet

 

I love to cook, making food is my passion. I especially like to make things that are healthy or organic. I love knowing I am making foods that won’t harm my family. This is why I was so excited to try Once Again Nut Butter. This butter is gluten free so I can eat it without feeling guilty. I love that this company is employee owned.

 

I received the box with a variety of the kinds of butter, and laminated recipes books loaded with amazing recipes.

The first recipe I tried was Cashew bread. It was amazing! The flavor was better than I could have imagined and it made my home smell so good.

Cashew Bread 1 cup Once Again Organic Cashew Butter 5 large eggs 1 tablespoon apple cider vinegar 3/4 teaspoon baking soda 1/4 teaspoon Celtic sea salt In a food processor, pulse together cashew butter & eggs until very smooth. Pulse in Apple cider vinegar. Pulse in baking soda & salt. Transfer batter to a greased 9 x 5-inch baking dish. Bake at 350 degrees for 45 minutes. Cool for 2 hours. Wrap in a paper towel, seal in a plastic bag. Refrigerate up to a week.

The next item I tried was the Trail  Mix Cookies using the recipe from the book.

 

Preheat oven to 350 °.
Place all ingredients together in the bowl of a stand mixer.
Mix on medium speed till well incorporated.
Drop tablespoons of dough onto a parchment- lined cookie sheet.
Bake for 12 – 14 minutes; Until cookies are set but still soft.
Remove from oven and let cool.

The were so chewy and flavorful, I am now converted. These flavors of Once Again Nut Butters can be used for so many items.

I am so excited, I received my Sun Basket meals today and already made the first meal!! Roasted pork chops with sweet potato hash and cilantro pesto, I am not a master chef but this was super easy and so yummy!!  I received three meals in separate bags, the meat was at the bottom of the box in ice packs.

 

 

I have to admit I was a little worried because I and the kitchen aren’t always friends. I like simple and can cook simple meals great. Like growing up in South Georgia, I learned how to make fried foods, mashed potatoes, and brown gravy. So trying new things is a little scary for me. Ninja Coffee Bar System #ninjacoffeebar

Living in South Texas has its advantages and disadvantages….

The advantages by far outweigh the disadvantages!  I love being able to walk outside and see all the stars in the clear sky. I love knowing that while driving I will always see a tractor or a cowboy on a horse walking down the road. I love how everyone tips their hats and says yes ma’am still. The cons, of course, are only a couple, the weather changes from day to day and it takes an hour to get anywhere.

I love coffee and usually can only get the good stuff when I go to town once a week. Since it is so far away, I spend a lot of money for that cup of coffee, I will get hot specialty coffee on cold days and cold specialty coffee on hot days. I am excited to finally get the Ninja Coffee Bar System. This coffee bar makes both hot and cold coffee. It is easy to operate and makes a cup or a pot quickly.

The first cup I made was a creme de caramel coffee. The coffee bar came with 20 recipes, I am determined to try them all!  This was so much better than any specialty coffee I have ever had. I love how rich tasting it was.

Cajun Rice – Ozeri 12″ Green Frying Pan #Ozeri

We have a weekly potluck dinner at our church. We usually decide the week before what theme we are going to fix and somehow it all turns out! This week we decided on a cajun theme dinner. So I found my grandmothers cajun rice recipe. She lived in Lousiana her whole life and could make some of the best cajun food I have ever eaten. This being my favorite so naturally, I wanted to try and make it.

 

 

Of course, I can’t make this without my go-to pan from Ozeri! I love how heavy duty, non-stick and easy to clean up this pan is. I used a teaspoon of oil and rub it with a paper towel I have never had an issue with it sticking. It comes with a felt cover to place inside while not using so you don’t have to worry about other pans scratching it when you stack them for storage.

This pan is 12” Green Earth Frying Pan by Ozeri, with Textured Ceramic Non-Stick Coating from Germany (100% PTFE, PFOA and APEO Free)

I have used several Ozeri pans for a long time and have never had them chip off like the other non-stick pans. On an average, I use my pan about 4 times a week. I do hand wash it after each use and don’t put it in the dishwasher, but have never had an issue with the handle or the non-stick material. They still look as nice as they did the day I got them.

 

So you can see why I love using it to make all of my favorite dishes, I am not ashamed to take the food in the pan and serve it! I always get compliments about it. Needless to say, this was a big hit at church, not only did I have very little left to take home but later that afternoon when I had to clean the pan it was so easy. I can’t wait to make my next project in my new pan, this size is perfect for my hungry family!!

My grandmother’s recipe is a little time-consuming but so worth it. If you love cajun food, then you must try it! Please read the instructions to make sure your pan will have a long life.

 

Recipe:

1 lb hot Italian sausage

1 small yellow onion diced

2 peppers ~ yellow, orange, red, or green – sliced

1 cup celery ~ finely chopped

8 Tb of butter

1 1/2 cup of rice

4- 41/2 cup water or chicken stock Seasoning

1 tb paprika

2 tb Himalayan salt

1/4 tsp dry mustard

1/4 tsp dried oregano leaves

1/4 tsp thyme leaves

1/4 tsp garlic powder

1 tsp black pepper

Brown sausage till no longer pink. Drain. Sauté vegetables in the butter just till slightly tender. Combine the rest of the ingredients in a skillet and bring to a boil stirring a few time. Lower heat and cover 25 to 30 minutes until rice is tender. Enjoy!

Best part about this cold day is I am making my favorite Bisquick Chicken and Dumplings.

 

Ingredients

1 1/2 cups milk
1 cup frozen green peas and carrots

1 cup chopped onion

1 cup chopped celery

1 cup cut-up cooked chicken
1 can (10 3/4 ounces) condensed creamy chicken mushroom soup
1 cup Original Bisquick™ mix
1/3 cup milk
Paprika, if desired

Directions

  • 1 Heat 1 1/2 cups milk, the peas and carrots, chicken, celery, onion and soup to boiling in 3-quart saucepan, stirring frequently.
  • 2 Stir Bisquick mix and 1/3 cup milk until soft dough forms. Drop dough by 8 spoonfuls onto chicken mixture (do not drop directly into liquid). Sprinkle with paprika.
  • 3 Cook uncovered over low heat 10 minutes. Cover and cook 10 minutes longer.

Thanksgiving Sweet Potato Casserole Recipe #Thanksgiving

I love this time of year, the smells of fall, pumpkin spice, cinnamon and pecans make my mouth water! A few years ago we had Thanksgiving at my in-laws and my husband’s sister made a sweet potato casserole. It was the absolute best I have ever had. I begged her for the recipe, since then I have made it every Thanksgiving. It is similar to the Ruth Chris Sweet Potato Casserole and so yummy! I wanted to share it because once you try it you will fall in love. It is really easy to make and people think you are master chef!!

Crust

  • 1 cup brown sugar
  • 1/3 cup flour
  • 1 cup chopped nuts (I like to chop about 1/2 cup  and use whole or cracked for the other 1/2 cup (pecans preferred))
  • 1/3 stick butter, melted
  • Combine brown sugar, flour, nuts and butter in mixing bowl. Set aside.

Sweet Potato Mixture

  • 3 cups mashed sweet potatoes (boil them until soft enough to mash with a fork)
  • 1 cup sugar (I do 3/4 sugar and 1/4 brown sugar)
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 2 eggs, well beaten
  • 1/2 cup (1 stick) butter, melted
  • 1 teaspoon cinnamon

Preheat oven to 350 degrees. Coat a medium-size casserole dish with nonstick spray.

Combine sweet potatoes, sugar, salt, vanilla, eggs and butter in a large mixing bowl in the order listed. Beat thoroughly with a hand mixer to increase the fluffiness of the sweet potato mixture.

Pour mixture into the baking dish. Bake for 30 minutes. (At this point, dish can be covered and refrigerated.)

Sprinkle the surface of the sweet potato mixture evenly with the crust mixture and return to oven for 10 minutes. Allow to set at least 30 minutes before serving.

The brown sugar and pecan crust should be slightly browned and crunchy.

Texas Pete Hot Sauce Perfect for Chili Dogs!! #tailgate

Chili Dog Mix – Texas Pete Hot Sauce

I am in charge of the chili for our tailgating party so each year I work on a new twist to my recipe to make that perfect chili for our hot dogs. I love trying different products to make the perfect chili, and since I do not like heart burn, I have found that making it from scratch is my best method and the one that gets the most raves. Of course my secret is the Texas Pete Hot Sauce. Without it my recipe is bland but the minute I add it everyone comments on how awesome it is.

Here is my secret recipe to making the best tailgating chili ever…

2 pounds of hamburger meat sauteed with onion a little garlic salt, salt and pepper. (Cook until fully cooked then drain grease).

1 Can Tomato paste, about 4 to 5 tomatoes, I love using fresh chopped up.

Chili powder to taste, more salt and pepper.

I used dried kidney beans, soak for one hour, boil for one hour drain and then add to sauce. (they need to cook about 90 minutes to be fully cooked).

Add about 10 drops of Texas Pete’s Hot Sauce.

Stir and let cook on low for about two hours. I usually add about 5 – 10 more drops of Texas Pete before serving. This gives it the best flavor.

We use Texas Pete’s Hot Sauce on just about everything from grilled oysters to Bloody Mary’s. This flavor is good with everything! If you are looking for something not too hot with a good flavor that everyone will enjoy then you need to try it!
