4 Recipes using Leftover Red Wine

A little red wine can be good for you. It can help to keep your heart healthy as many of its properties and compounds have excellent cardiovascular effects. Its antioxidants can slow down the progression of heart disease caused by the buildup of fat, plaque and cholesterol on the artery walls. It can protect heart cells from tissue damage often caused by a stroke. It can also prevent oxidative stress and help to regulate blood pressure.

 

Red wine doesn’t just look after your heart. It also helps to lower cholesterol, manage diabetes, obesity and weight problems and there’s even some evidence that a little red wine now and then can help to prevent and delay the progress of Alzheimer’s disease.

 

But, red wine can also be hard to keep. You pop a cork and enjoy a glass in the evening, trying to stick to your limits. Only to find that wine left open on the side doesn’t taste as good in a few days’ time, as cooling wine should always be kept at the correct temperature.  You can use a cork or wine vacuum to protect the flavor. But, perhaps a better way to use your leftover red wine is in cooking.

When you cook with red wine, some of the alcohol content is burnt off, making it perfectly safe for the whole family to eat. But, enough remains that the wine still carries health benefits. It’s also still filled with beneficial properties which will not be damaged during the cooking process. Sangria Chicken

 

Sangria chicken is a gorgeous dish filled with Mediterranean flavors. Perfect for a summers evening. Simply marinade 4 chicken breasts in all of your favorite fruity sangria flavors and pour over the leftover red wine. Then, slow cook with 1 tsp thyme a pinch of black pepper, 4 cloves of garlic and 4 bay leaves for a fruity dish filled with tender chicken. Serve with potatoes for a filling family meal.

 

Beef Chili

 

Beef chili is a popular family favorite, and most of us have got our own recipe. Adding red wine couldn’t be easier. Simmer the beef and veg in your leftover red wine for a few minutes before adding your usual stock and spices. Then, add a cinnamon stick for an extra spark of flavor and leave to simmer for a few hours.

 

Roasted Red Pepper and Tomato Soup

 

Soup is incredibly easy to make and works well with most combinations of ingredients. Slice 5 red peppers, drizzle in olive oil and roast for 30 minutes. Add to a large pan with a tin of chopped tomatoes and 1 liter of veg stock. Simmer for 1 hour before blending to a smooth texture. Stir in a splash of red wine just before serving for a little extra tang.

Slow cooked beef brisket simply melts in your mouth. It’s fantastic. Pour some red wine into your slow cooker or roasting tin with the meat for a new twist.

Easter Basic Cheesecake Recipe

It’s time to start planning those recipes that make Easter dinner special!

A luscious, creamy cheesecake is a great way to top off such a gathering and you can bake one at home, just like the professionals do.

Many professional bakeries use the water bath method of making cheesecake.  When using a water bath, a batter filled springform pan goes inside a larger water-filled pan.  The water holds just the right temperature to keep egg proteins in the batter from bubbling to the surface which can cause undesirable cracks.  The result is a rich, creamy dessert baked uniformly from the edges to the center and is smooth across the top.  The Easy Bath Cheesecake Wrap can help make that happen!

Basic Cheesecake Recipe

Ingredients:

CRUST:

1 ½ cups graham cracker crumbs

½ cup sugar

4 tbsp (1/2 stick) butter

BATTER:

2  8oz pkg (1lb) cream cheese

1 ½ cups sugar

¼ cup flour

1 tbsp Vanilla (not imitation)

3 cups (24 oz) sour cream

4 eggs at room temperature

Preparation:

First, remove the eggs from the refrigerator to come to room temperature.

Preheat oven to 300F.

Prepare crust:

Melt butter in the microwave for 45 seconds.

Mix graham crumbs and sugar in medium bowl, add butter and mix well.

Spray collar of the pan with bake-release spray or vegetable spray.

Press crumb mixture into bottom of pan tightly with the bottom of a flat glass.

Bake at 300F for 13 minutes.

Prepare batter:

Soften cream cheese in microwave on defrost or low for approximately 3 minutes.

Add the sugar and flour, mix until very creamy, scraping the sides often.

Add the vanilla and continue to mix.

Add the sour cream and beat until incorporated.

Add the eggs, 2 at a time, but only barely beat, just until mixed in.  DO NOT OVERBEAT!

Place springform pan with prepared crust into the Easy Bath Cheesecake Wrap.

Place both into the water bath.

Pour batter into prepared crust.

Fill water bath with tap water to designated fill line and place in the oven.

Bake at 300F for 1 hour.  Then turn off oven, leave cheesecake in oven with door ajar 6-12” for 1-2 hours.

Remove from oven, from the water bath and leave on counter for another hour if possible.

Then place in refrigerator overnight.  Next day, loosen collar and remove gently.

Serve and enjoy as is or top with fruit or anything you choose!  Also freezes well.

Directions

Zucchi Sweet & Fruity Extra Virgin Olive Oil Mississippi Roast Recipe

I received this product for review purposes from momsmeet.com, although this is 100% my own opinion.

I have tried a lot of olive oils in my life and have never really found one I liked better than the others until I tried the Zucchi Sweet & Fruity Extra Virgin Olive Oil  I decided to make the Mississippi Roast that I have seen all over social media. I used the Zucchi Olive Oil to heat the meat up and it gave it the juiciest flavored meat I have ever had.

After making the Mississippi Roast, I knew I had found the best combination of a meal I have ever had. I wanted to share this recipe with my friends and family!

Ingredients:

  • 1 (3 pounds) Beef Chuck Roast
  • 3 tsp. Zucchi Olive Oil
  • 1 Stick Salted Butter
  • 8 Pepperoncini Peppers
  • 1 (1 ounce) Packet Ranch Dressing Mix
  • 1 (1 ounce) Packet Dry Au Jus Mix

Directions:

  1. Put 3 tsp. Zucchi Olive Oil in skillet. Brown meat on each side on high.
  2. Place roast in a slow cooker. Form a pocket in the top of roast and place butter, pepperoncini peppers, ranch dressing mix, and au jus mix in the pocket.
  3. Cook on Low for 8 hours.

Don’t add water, this will make a juicy mix to use on potatoes or rice.

Easy Breezy Chicken n’ Dumplings Recipe

Texas finally got cold enough this year to make one of my favorite meals! This year we have had more freezing days than I have ever remembered having before.

I decided to make my husbands favorite meal, Chicken n Dumplings. Not only is it inexpensive to make but it tastes delicious!

 

INGREDIENTS:

3 to 4 chicken thighs

4 Cups of Water

green onions

celery

1 can of mixed veggies

3 cups of Bisquick / baking mix

1 1/2 cups milk

 

DIRECTIONS:

Boil chicken, celery and green onions in four cups of water until chicken is completely fully cooked.

Take chicken out and set to the side to cool. Drain can of mixed veggies and pour in broth. Mix baking mix and milk in a separate bowl and stir until complete (will be a doughy thick mix).

Remove 1 cup of broth mix.

Turn broth and veggies on high and debone chicken.

Once broth is boiling add chicken then drop spoon-size dough mix into pan.

Turn down the heat to low and pour remaining broth mix on top.

Slow cook for ten minutes.

This makes a complete meal and can serve up to 6 people!

  • 1 teaspoon vanilla

Directions

  1. Whisk almond flour, water, eggs, maple syrup, vanilla, and salt together in a bowl until batter is smooth.
  2. Heat oil in a skillet over medium heat; drop batter by large spoonfuls onto the griddle, and cook until bubbles form and the edges are dry, 3 to 5 minutes. Flip, and cook until browned on the other side, 3 to 5 minutes. Repeat with remaining batter.

I like preparing them the night before and letting the husband wake up and have them ready for me when I wake up.

Poor Boys Potato & Cheese Soup Recipe

I live in South Texas and this has been the craziest weather I have ever seen. First we had a hurricane in August, then snow in November. Today the whole state of Texas is shut down because of the freezing weather! Schools are closed and offices every where. We cannot drive on ice or snow therefore we stay home when it gets this bad!

The wind is so bad the electricity is flashing. I decided to make something yummy, warm and quick!!

So I am throwing together one our favorite meals using what I have here in my pantry and refrigerator!

Poor Boy’s Potato & Soup Recipe:

Ingredients

1 Can of Chicken Broth

2 Cups of Water

6 slices of thick  bacon

5 to 6 potatoes

1 can cream of chicken

1 cup of sharp cheddar cheese

chopped green onion

1 tsp salt

Directions

Add broth and water, green onions, salt and potatoes. Boil till potatoes are soft. Do not drain, add cream of chicken and cheese and green onions and cooked bacon. Simmer till cheese is melted about 10 minutes.

Save some green onion, shredded cheese and bacon bits for topping.

I always freeze left over french bread so I am going to slice that up and add garlic powder, salt and butter then toast it..

I am just now getting around to opening and using my Christmas gift, the Instant Pot & Pressure Cooker, I thought what a great time to compose some great recipes to use in the future!

I have only used my Instant Pot one time to make beef tips and rice and it turned out amazing. I loved how tender the meat turned out and it was so quick and easy.

Here is how I made my beet tips and rice, this was so easy and delicious, good luck using yours and have fun with it!

INGREDIENTS

  • 3 teaspoons olive oil
  • 1 beef top sirloin steak (1 pound), cubed
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/3 cup dry red wine or beef broth
  • 1/2 pound sliced baby portobello mushrooms
  • 1 small onion, halved and sliced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 3 to 4 tablespoons cornstarch
  • 1/4 cup cold water
  • Hot cooked Rice (We love Uncle Ben’s)

DIRECTIONS

Select saute setting, and adjust for high heat, in a 6-qt. electric pressure cooker. Heat 2 teaspoons oil. Sprinkle beef with salt and pepper. Brown meat in batches, adding oil as needed. Transfer meat to a bowl. Add wine to cooker, stirring to loosen browned bits. Return beef to cooker; add mushrooms, onion, broth and Worcestershire sauce. Lock lid; make sure vent is closed. Select manual setting; adjust pressure to high, and set time for 15 minutes. When finished cooking, quick-release pressure according to manufacturer’s directions.
Select saute setting, and adjust for high heat; bring liquid to a boil. In a small bowl, mix cornstarch and water until smooth; gradually stir into beef mixture. Cook and stir until sauce is thickened, 1-2 minutes. Serve with rice.
Yield: 4 servings.

Quick and easy Cranberry & Nut Muffins Recipe with Cranberry Sauce topping!

I made these for a church pot luck and they were such a hit! We received a few bags of cranberries from a friend and I wanted to find something good to make with them. I found a great recipe and tweaked it a little to make the perfect cranberry muffins!

Ingredients

1 1/4 cups sugar
1/4 cup butter or margarine, softened
2 eggs
1/2 cup milk
2 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup chopped pecans
2 cups Cranberries, coarsely chopped

Directions

Preheat oven to 350ºF.

Mix sugar and butter together in a medium mixing bowl until completely blended. Add eggs one at a time, beating after each addition. Stir together flour, baking powder and salt in a separate medium mixing bowl. Add this alternately with the milk to the butter mixture. Stir in nuts and cranberries. Spoon into 12 paper-lined muffin cups, filling 3/4 full with batter.

Bake 25-30 minutes or until golden brown. Makes 12 muffins.

Cranberry Sauce:

1 Cup Cranberry’s Mashed, 1/4 cup sugar, 1 tsp. lemon juice and 2 tsp. water. Cook on low for 10 minutes. Enjoy!!

San-J Tamari Chicken Fried Rice Recipe

Ingredients:
2 tablespoons sesame oil
2 tablespoons vegetable oil
1-pound boneless skinless chicken breasts,
1 1/2 cups frozen peas and diced carrots blend
3 green onions
2 to 3 garlic cloves
3 large eggs, lightly beaten
4 cups cooked rice
3 to 4 tablespoons Tamari Lite Soy Sauce
A pinch of salt and pepper

 

Directions:
· To a large non-stick skillet or wok, add the sesame and vegetable oils, sliced chicken breast. Then you will want to cook over medium-high heat for about 3 – 5 minutes or until all the pink is gone while flipping occasionally so all sides can cook evenly. The cooking time might be different based on the size of the type of the chicken being cooked with. After the chicken is finished you will want to move it out of the skillet onto a plate, however, be sure to keep the juices in the skillet

Add the peas, carrots, green onions, then cook for about 2 – 3 minutes, or until the veggies are soft.
Then will you will want to add the garlic cook for about 1 -2 minutes while stirring frequently.
After stirring the garlic in you will want to push the veggies to one side of the skillet so you can scramble eggs on the other side. You will want to scramble the 3 large eggs. After scrambled mix the eggs with the veggies.
Combine the chicken, rice, into the veggies and eggs. At this point, you should evenly drizzle Tamari Lite sauce, salt, and pepper. Then you should cook everything for about 2-3 minutes so the chicken, vegetable, eggs, and rice can blend together easily. Serve your plate and enjoy!

Ingredients:

5 Ripe Avocados. Use 4 in recipe and dice 1 for the top.
1 can of refried beans.
16 ounces of sour cream.
1 pack of dry taco seasoning mix.
1 to 2 lemons (need 2 teaspoons) or lemon juice.
Garlic cloves (grind 3 cloves).
Green onion (chop 3 to 4 stalks)
2- 8-ounce blocks of cheese, grated (I use mild).  If you’re in a hurry, pre-grated cheese works well.
1 small can of sliced black olives.
1 medium-sized tomato diced, chunky sizes.

Instructions:

In a glass bowl spread the can of refried beans evenly along the bottom.
Combine the sour cream and the dry taco seasoning, then spread on top of the beans.
Mix the avocados with the lemon juice and garlic. Sometimes I mash them, sometimes I cube them. Add on top of the sour cream mixture.
Add the cheese, green onions, black olives and tomatoes to top it off.

Serve with Tortillas.

Spider-man Bath Bombs Recipe Fun in the tub!! Easy!! DIY

I have three grandsons who all love Spiderman. They are also extremely active and have sinus issues, so I came up with an idea to make them “Spider-man Bath Bombs” and adding sinus and calming essential oils to help them at night time.

The reason we call them Spider-man bath bombs is simple, because they are red and blue like Spider-Man. I have found adding little mini toys inside them so they find them in the tub is a fun way for them to play while the essential oils do their job!

Most of the time you can find mini figures at Dollar Tree, or their own toy box, they don’t care!! But be careful if too small with your little ones, make sure they are age appropriate!

How To Make Your Own Bath Bombs:

Ingredients and Supplies:

  • 1 cup baking soda
  • 1/2 cup citric acid
  • 1/2 cup Epsom salts
  • 1/2 tsp. Corn Starch
  • 1 tsp. water
  • 2 tsp. essential oil
  • 3 tsp. oil (olive oil)
  • food coloring (any color you want)
  • bowl
  • whisk
  • cup
  • bath bomb mold

Mix all the dry ingredients together in a bowl, then divide it in two if you want two different colors.

Mix all the wet ingredients together in a cup, if more than one color, I separate into more than one cup.

 

Pour the wet into the dry mix and stir until smooth.

Put into the mold and wait.

Usually about 5 minutes later, I remove the top.

After sitting out over night I bag or box them individually.

If they begin to swell then you have too much moisture in them, add a little more cornstarch.

If they begin to crack then add a few drops of water to the mixture.

Stubbs BBQ & Memorial Day Cookout! #stubbsbbq Recipes

 May is the official kickoff of grilling season with Memorial Day and National Burger Month. Stubb’s encourages all food lovers to try new traditions this summer, including boosting their favorite burgers with condiments that pack more flavor and great taste. 

We enjoyed our meat with Stubbs BBQ Sauce and Seasoning!! But you can do your anyway you like to!!

DIY sauce recipes: Kick the ketchup habit with some fun, easy and tasty DIY burger sauces that you can make with some items you might already have on hand.

§  Mustard + Original BBQ Sauce: ¼ cup mustard to every 1 cup of BBQ

§  Bang Bang Sauce: Mix together 1/2 cup of mayonnaise, 3/4 cup Stubb’s Original BBQ sauce, 1 heaping tablespoon of hot sauce and either a tablespoon of honey or some brown sugar depending on what I am cooking.

§  Spicy Mayo: ½ cup of mayonnaise and 3 tablespoons of Stubb’s Spicy BBQ sauce

§  Not Just Basic BBQ:

o    For a sweeter BBQ sauce – add 2 tablespoons brown sugar and 2 tablespoon honey to 1 cup of Original BBQ

o    To give your BBQ sauce a spicy kick – add habanero peppers to 1 cup of Original BBQ (add as many as you like depending on your level of spice)

Tips for Grilling your Meat:

·         Start with a clean grill so your burgers don’t stick and fall apart. My tip is to use an onion to clean your grill. Cut the onion in half, and while the grill is heating up, rub the onion across it. The juices from the onion clean the grill and get it ready for use.

·         Make a thumbprint in the middle of the patty before putting it on the grill. This will help the patty come our nice and flat (not puffy in the middle) and the meat will be cooked evenly throughout.

·         Avoid burning or charring your meat by flipping it every couple of minutes. It’s a myth that you shouldn’t flip your meat! The hotter the grill, the more often you should turn it.

Full Recipes:

1.     Toasted Pecan Burger:

·         Ingredients

–       1 pound ground chuck

–       ¼ cup chopped red onion

–       ¼ cup chopped pecans, toasted

–       1 tablespoon finely chopped green bell pepper

–       3 tablespoons Stubb’s Original BBQ Sauce

–       2 tablespoons Stubb’s BBQ Spice Rub

–       Lettuce, mayonnaise, and toasted buns, for serving

·         Instructions:

–       Mix together the chuck, onion, pecans, bell pepper, Stubb’s Original Bar-B-Q Sauce, and Stubb’s Bar-B-Q Spice Rub. Shape into 3 large or 4 average-size patties. (The burgers may be mixed and shaped earlier in the day; refrigerate until ready to use.)

–       Prepare a grill for direct cooking. For a charcoal grill, when the coals are ashed over, rake or spread them out in the bottom of the grill so the food can cook directly over the coals. (For a gas grill, fire up the burners so the food can cook directly over the heat.)

–       Grill the burgers over direct medium heat, first on one side then on the other, 7 to 10 minutes, until they reach your desired degree of doneness. (Medium burgers register an internal temperature of 160°F.) Serve with lettuce, mayonnaise and toasted buns.

2.     Stubb’s Fried Egg Burger with Spicy Mayo:

·         Ingredients

–       ½ cup mayonnaise

–       3 tablespoons Stubb’s Spicy BBQ Sauce

–       2 lbs. lean ground beef

–       1/3 cup Stubb’s Texas Steakhouse Marinade

–       2 tablespoons vegetable oil

–       6 eggs

–       6 hamburger buns

–       Tomato

–       Lettuce

–       Blue Cheese (optional)

 

·         Instructions:

–       In a small bowl, mix the mayonnaise and Stubb’s Spicy BBQ sauce. Set aside.

Using your hands, mix the ground beef and marinade. Divide meat into six patties.

–       Prepare the grill for direct cooking. Cook the burgers for 6-7 minutes on each side for medium doneness.

–       Heat a large non-stick skillet on medium heat. Add 1 tablespoon of vegetable oil. Crack eggs into skillet and cook until the whites are set but the yolk is still runny, approximately 3 minutes. If you prefer your eggs over easy, flip and cook for an additional 15-20 seconds.

–       Assemble the burger in the following order: bottom bun, lettuce, tomato, cooked burger, blue cheese (optional), then egg. Spread the spicy mayonnaise on the top bun and place on top of the egg.

 

3.     Stubb’s Stuffed Burger:

 

 

·         Ingredients

–       2 lbs. ground beef

–       3/4 cup Stubb’s Original BBQ Sauce

–       2 tablespoons Stubb’s Beef Marinade

–       2 tablespoons Stubb’s BBQ Spice Rub

–       7 oz. can of nacho sliced jalapenos

–       3/4 cup shredded cheese

·         Instructions

–       In a large bowl, mix the ground beef, Beef Marinade, and Bar-B-Q Spice Rub together with your hands.

–       Use about 1/3 cup of meat and press it into a thin patty with your hands. Top the patty with one tablespoon sliced jalapenos and two tablespoons shredded cheese, leaving at least a ¼” rim around the edge. You can adjust toppings per your taste.

–       Press out another thin patty. Place the second patty on top of the first patty and use your fingers to seal the two patties together well. Repeat another five times to make a total of six burgers.

–       Grill burgers over medium-high heat for 4-5 minutes per side, flipping once during cooking. Baste with Stubb’s Original Bar-B-Q sauce during last 3 minutes of cooking.

–       Serve on a bun with your favorite toppings.

Microwave Pecan Brittle Recipe – Quick & Easy #Pecan #recipes

Growing up in Georgia, fresh sweet pecans were always readily available. Now that I am an adult and live in Texas, I crave those yummy pecans all the time. Fortunately, my sister owns a pecan orchid so I still get those yummy pecans fresh each year.

I am going to share my favorite pecan brittle recipe.

Ingredients

  • 1 cup chopped pecans
  • 1 cup white sugar
  • 1/2 cup light corn syrup
  • 1/8 teaspoon salt
  • 1 tablespoon butter
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract

Directions

  1. Spray baking sheet to prevent sticking!
  2. Combine pecans, sugar, corn syrup, and salt in a glass 4-cup measuring cup.
  3. Heat in microwave for 3 1/2 minutes; stir and heat for 3 1/2 more minutes. Stir butter into pecan mixture and heat in microwave for 2 more minutes.
  4. Stir baking soda and vanilla extract into pecan mixture until foamy; pour onto the prepared baking sheet. Allow cooling completely before breaking brittle into pieces. Store in an airtight container.

  Frozen Yogurt with Berries

Frozen Yogurt with Berries

Prep Time: 15 minutes | Total Time: 4.5 hours

Ingredients

  • 5 tbsp of strawberry
  • 4 tbsp of raspberries
  • 1 tbsp of Dolcedì
  • 1.5 cups of yogurt
  • 3 tsp of vanilla extract

Directions

  1. Cut the fruit into large pieces and put it in a saucepan with 1 tbsp of Dolcedì.
  2. Cook over low heat for about 10 minutes. The fruit will melt and begin to thicken.
  3. Pass the sauce through a sieve so as to remove all fruit seeds.
  4. Add to the mix the yogurt, a little Dolcedì, the vanilla extract and mix well.
  5. Leave to set in the freezer at least 4 hours (or overnight).
  6. Enjoy!

After eating so much for Easter we decided to try and eat light this week. 1/4 mayonnaise

1/4 chopped green onion (or any other type onion you may have)

Mix it all together and serve. I love to serve on crackers!

Rockport Texas #rockporttexas #rockport Flounder Recipe

We bought a condo in Rockport, Texas, which is located on Aransas Bay, home of some great fishing and beautiful water. I have had the pleasure of the most beautiful photo opportunities. I am by no means a professional but you can’t go wrong when you are surrounded by beauty. I wanted to share a few of my favorite pictures.

Our Condo is facing the water and we have a 750′ pier, as you can tell I love taking pictures of the pier!! Especially the sunset.

This year I want to try and take some with people fishing in the background. I love walking down the beach road and listening to the water, and finding new photo opportunities.

These are just a few of my favorites, hopefully I will have more in the next couple weeks to share.

We loving fishing here, we catch flounder, trout and red fish. Our favorite is flounder. It is some of the best fish you will ever eat!

I have an amazing flounder covered and smothered recipe:

Season and bake flounder (we use Tony Chachere’s)

Melt butter and onions in a pan add flour and a broth (we use veggie broth)

mix until smooth, then add craw fish tails cook about 7 minutes longer.

We serve this over rice and it is to die for!!

Best part about this cold day is I am making my favorite Bisquick Chicken and Dumplings.

 

Ingredients

1 1/2 cups milk
1 cup frozen green peas and carrots

1 cup chopped onion

1 cup chopped celery

1 cup cut-up cooked chicken
1 can (10 3/4 ounces) condensed creamy chicken mushroom soup
1 cup Original Bisquick™ mix
1/3 cup milk
Paprika, if desired

Directions

  • 1 Heat 1 1/2 cups milk, the peas and carrots, chicken, celery, onion and soup to boiling in 3-quart saucepan, stirring frequently.
  • 2 Stir Bisquick mix and 1/3 cup milk until soft dough forms. Drop dough by 8 spoonfuls onto chicken mixture (do not drop directly into liquid). Sprinkle with paprika.
  • 3 Cook uncovered over low heat 10 minutes. Cover and cook 10 minutes longer.
