Growing up, my mom served avocado with just about every meal we had.  She loves them more than anyone I’ve met before, except maybe me.  I don’t know if it was due to her influence of serving avocados so much or if it’s because I have the same cravings as she does, but like her, my kids were raised on avocados.   From tacos to salads to my 7 layer dip recipe, I serve avocado’s just about daily.  I even use them in my smoothies.  As much as I love avocados, I equally love to host parties. Of course, I show off my favorite avocado recipes during all of my events.  Some I’ve created myself and some I talked my mom out of.  I’ve tried just about every avocado recipe online that I could find as well.

There are several reasons why it’s easy to get the kids to eat avocados. In fact, they were my kids first fruit. They are smooth and have a creamy consistency along with a mild taste. I would mash them up and feed them from a spoon until they were old enough to have slices of them. Like my own kids, even before I knew about the nutritional value of fresh avocados, I loved them. After learning that Avocados contribute nearly 20 nutrients, including vitamins, minerals, dietary fiber, and phytonutrients, that are important to infant/toddler nutrition, I started giving them to the kids even more often than I already was. My mom probably knew all of this when she served us avocados, but being a child, all I knew was that I loved the taste. She was counting on that when she served us meals with avocado in them. I’m sure she also knew that wholesome, fresh foods are less likely to contain added sugars, salt, and other processed ingredients.

Today I’d like to share my favorite 7 layer dip recipe with you so you can encourage your own kids to enjoy avocados. It’s sure to be a party favorite so go ahead and bookmark my post to save my recipe.

Ingredients:

5 Ripe Avocados. Use 4 in recipe and dice 1 for the top.
1 can of refried beans.
16 ounces of sour cream.
1 pack of dry taco seasoning mix.
1 to 2 lemons (need 2 teaspoons) or lemon juice.
Garlic cloves (grind 3 cloves).
Green onion (chop 3 to 4 stalks)
2- 8-ounce blocks of cheese, grated (I use mild).  If you’re in a hurry, pre-grated cheese works well.
1 small can of sliced black olives.
1 medium-sized tomato diced, chunky sizes.

Instructions:

In a glass bowl spread the can of refried beans evenly along the bottom.
Combine the sour cream and the dry taco seasoning, then spread on top of the beans.
Mix the avocados with the lemon juice and garlic. Sometimes I mash them, sometimes I cube them. Add on top of the sour cream mixture.
Add the cheese, green onions, black olives and tomatoes to top it off.

Serve with Tortillas.

Your Kid Wants Their Birthday To Be One Thing: Exciting

We wish we could look forward to anything in life the same way a child looks forward to their birthday. The excitement on their face, the way they can’t sleep at night, how much they can’t wait to see their cake, or their friends, or what you have got them, or what you have planned, or just the fact they get to wear a badge that proudly displays that this is their day and nobody else. It is the most infectious type of euphoria we have ever experienced.

 

The problem is, this total elation that bursts out of them like sweets from a pinata really heaps the pressure on us parents. They are so excited about this day and it is our duty to make sure that it somehow exceeds all expectations (knowing that we are setting the bar dauntingly high next year, and all the years after that).

 

But no matter how hard we try to do something special, we always have that niggling feeling at the back of our heart that says we need to do more. We think back to our own childhood birthday’s, think how hard our own mum’s worked to supersede our imaginations and then try and work out how we can achieve the same thing, but on steroids.

 

The thing that probably stands out more than anything, though, is the fact your parents always made every part of that day about you. You’ve probably forgotten what you did, who was there, what sort of cake you had, how many candles there were and the fact you got to tear the wrapping paper off Disney Princess mystery box and fawn over it with momentary joy. All of these details seem to fall away. What lasts a lifetime is that feeling of excitement, and that is exactly what we are going to try and help you take to another level because we have come up with a list of ways you can keep the surprises coming and the feeling of joy bubbling away like a pan of custard left on the hob.

 

This is your kid’s birthday and it is going to be the best birthday yet!

 

  1. Make The Build Up As Exciting As Possible

Your kid is going to be naturally excited by their birthday, but that doesn’t mean you can’t fuel that gorgeous little fire a little bit more. As we’ve established, the excitable thing is the best part, so latch onto this and have a countdown that lasts the entire week leading up to their big day. Have a black board in the kitchen that counts down or a calendar where they can mark the days off with a big, fat, red pen. Maybe have a bouquet of ten balloons, and let them take one away every morning. It doesn’t even have to be a countdown if you don’t want. It could be a series of clues, each clue leading them to another until they finally discover their stash of presents you’ve hidden somewhere genius. Whatever you think will get their excitement boiling over, do it. Your kid will love this as much as their actual birthday.

  1. Nothing Beats A Birthday Breakfast

Every child has a favorite breakfast, that thing usually only reserved for special occasions. Well, whatever it is, make it with sprinkles. Literally. If your kid hasn’t got a favorite, know that you cannot go wrong with the smile-inducing classics. We’re talking a stack of pancakes (covered in sprinkles) or a breakfast milkshake (with extra sprinkles) or a pile of waffles (yes, with sprinkles). Anything that can be deemed fun and special and worthy of the best birthday breakfast ever. Oh, and if you can, try and add a candle or ten just to add to the joviality that much more.

  1. Decorate The House While They Are Sleeping

Nothing beats that moment where you wake up, rub your eyes, stretch out your arms and legs, ponder the world for a moment and then suddenly remember that it’s your birthday, motivating you to jump up and run downstairs to find the whole house has been decorating in your honor. So go utterly crazy on this front. Buy a selection of shirts for the birthday boy and lay them out for them to choose a birthday outfit from. Hang up streamers and balloons and banners. Get pictures of their life up to now printed out and stick them all over the place. Write birthday messages on the mirror in the bathroom. Absolutely everything and anything you can think and, remember, the wilder your ideas the better. Get all creative on this birthday.

 

  1. Decorate Your Car Too

There is nothing that will make your kid feel like their birthday is 100% their day than having random people and passersby celebrate it with them. They kind of expect you to celebrate it with them, but they do not expect everyone to get involved. That’s why you need to get yourself some colorful window marker and cover your glass in messages like, “Birthday Boy!” and “Ten Today!” And “Honk for Sam!” And anything else you want to add, like pictures of balloons and cakes and all that kind of jazz. Having people honk as they drive past will have your little one smiling and laughing, and it won’t get boring for any of you either. Every single beep of a car horn will fill your little world right up, which is just how it should be.

 

  1. Little Things Can Make A Big Difference

The little thing on their day is what makes all the difference. Things like declaring it a screen free day for their siblings and you, the parents, will ensure that all the focus is directed towards them, which is a nice feeling to have. If it is their birthday on a school day, then why not go the extra mile and wrap every single item in their lunch box in birthday wrapping paper, while also throwing in a couple of balloons and party poppers and that sort of thing. Measure them too. Every kid wants to see how much they have grown since their last birthday, so make sure you have a wall chart you can add to, or start. Make this a new tradition in which to follow because, for them, every birthday is proof of how much bigger they are, and they will want to see that first hand. These are all little things, minuscule and minute things that can go easily unnoticed, but they are things that will make all the difference.

 

  1. A Very Special Meal Out

Go to your child’s favorite restaurant, or to that place that will completely blow their mind because it is more than just food on a plate, it is an experience that will totally blow their mind. This could be somewhere you have heard people rave about, or it could be somewhere you stumbled across in a local magazine, either way, indulge their childish fantasies. Just remember to call ahead and let the restaurant know that it is your kid’s birthday. Like we said with the whole decorating your car thing, the more strangers that celebrate their birthday with them the more special and unique it is going to feel, and nothing says that like a restaurant full of strangers singing happy birthday to you while sliding a cake you didn’t expect onto the table in front of you. This is what magic looks and feels like. These are the things that will stay with them for a lot longer than presents.

  1. Get All Creative With This Day

We’re not just talking about arts and crafts here, although yes, please do indulge this side of things too. Make a special (non-alcoholic) cocktail or smoothie with them that they can get involved with, and let them name it. Maybe even add the recipe to a book of your creation, one that you can add to at every special occasion. It could be that you make a birthday crown with them too, something they can wear all day and attract calls of “happy birthday” from people everywhere they go. The other type of creative we were alluding to, however, was to do with memories. Set up a special interview with them. Have a video camera and ask them questions while filming, things that will make them smile and laugh years down the line, maybe even prove they were right about their hopes and dreams and aspirations. We live in a world where we can document things like never before, and these will be cherished in time. It doesn’t even have to be a video interview, though. It could be a written one, with you tucking the paper into their memory box to open on their 21st.

 

Making your child’s birthday is all about building their excitement, devoting every part of this day to their happiness and creating memories that will easily outlast the toys that you give them. Of course, the presents are an important aspect, but it is the feeling of this being their day that will make them happiest of all. So get your thinking cap on and think outside the box a little. There are ways to build their glee that you have never thought about, and it is up to you to exploit these.

Now that we are right in the thick of the glorious summer season there is no wonder people are looking happier and feeling extra sociable. The summer months certainly tend to bring out the best in us as we enjoy the most social time of the year.

 

So why not take advantage of the warmer weather and host a special evening at your home? If you are a dab-hand at hosting then why not consider throwing a fabulous summer soiree in your garden? What better way to celebrate the summer than to organize a fabulous evening with your friends enjoying your garden and some fantastic food? Follow our simple tips below on how to organize and prepare a wonderful summer evening in your garden to entertain your friends and enjoy a fabulous summer get together out in the fresh air.  

 

Do The Invitations Properly

 

Nowadays, we tend to be quite relaxed when it comes to inviting people to our homes for dinner parties and get-togethers, so why not be a little different this time. Forget the standard quick phone call or brief SMS and start the evening as you mean to go on by sending an invitation that gets your guests excited. Have a little fun inviting your friends and make your garden party a glamorous affair by sending out stylish and chic invitations

 

A good way to do this is by sending out E-vites. Online E-vites are a great way to make invitations feel a little more official and they are a good way to make your guests feel that you are really going to town and organizing a super special night. Perhaps you want to do something extra fun and create a themed night, or maybe you want to organize a fancy dress party and you want your guests to follow a certain dress code. Organizing your Garden

 

Once you have established how many people are coming you will then need to make sure that your garden is looking absolutely fantastic. You should section off a good afternoon to focus on de-weeding, deadheading your plants and sorting out all the shrubs and flowers in your garden. You should be looking at all the plants in your garden and making sure they look in peak condition and your lawn is mowed so the grass is looking pristine and neat.

 

After all the plants and flowers have been taken care of you will then want to turn your attention to your outdoor furniture. You will need to wash down your furniture until it sparkles and then looks at organizing your outdoor furniture in a way that best shows off your patio and seating area. Depending on the amount of people you are expecting you may need to bring out extra tables and chairs for your guests so think about the other areas of the house where you can grab additional seats and tables, or you could even think about borrowing or hiring these for a day if you are expecting a lot of guests.

 

Food with a Summer Twist

 

OK, so your garden is now looking fantastic, it is now time to start thinking about the all important food that you want to impress your guests with. Perhaps you want to put on a relaxed BBQ, with a variety of fresh salads and little nibbles. Or maybe you want to try and do something a little bit different.

 

Why not treat your guests to a delicious seafood feast? Seafood is a fantastic choice in the summer as it is light, fresh, reminds us of the sea and is just that step up from a standard summer BBQ. With so many wonderful seafood recipes online, you will want to put in ample research into the types of dishes that you would like to create. So once you know what you want to create go to your local fishmongers and pick out a range of their best shellfish, their finest fishes like salmon, trouts and monkfish depending on the dishes you want to create. Make sure that you don’t buy the fish until the day of the party itself as you will want to shellfish and fish to be as fresh as possible.

 

Presentation

 

Foods like oysters, lobster and cockles are great to present on a bed of ice and lemon so think about presenting these types of fish in a really simple way. If you think your guests would prefer their fish in the form of a great Spanish Paella then you will need to buy a large Paella dish to cook the rice and the fish in together. You can then simply serve this dish up in the pan and your guests can help themselves straight from the pan.

 

Or perhaps you fancy trying your hand at a delicious seafood linguini or risotto. In which case you can serve a dish like this with gorgeous crunchy bread and a light Mediterranean salad. So jump online and look at the type of recipes you would like to create to really wow your guests and treat them to a lip-smackingly scrumptious seafood feast.

 

It is also important to think about the wine pairings that you want to create if you are doing seafood. White wine is obviously the best option to go with fish, but there are certain white wines that work particularly well with certain types of fish. Therefore if you are uncertain about the best types of wine to get, then visit your local wine merchant, tell him what you are planning to cook and let him guide you through the best wines to match your menu.
