Ingredients

For the Best Dough:

  • 3 ½ cups (450g) all-purpose flour
  • 1 ½ teaspoons salt
  • 2 tablespoons sugar
  • 1 packet (2 ¼ teaspoons) instant yeast
  • 1 cup (240ml) warm milk (about 110°F or 43°C)
  • 4 tablespoons unsalted butter, melted
  • 1 large egg

For all of the Add-ins:

  • 1 cup shredded sharp cheddar cheese
  • 2 medium jalapeños, diced (seeds removed for mild spice or kept for more heat)

For Topping (Optional):

  • Extra shredded cheese
  • Thinly sliced jalapeños
  • Melted butter for brushing

Instructions

Step 1: Prepare the Dough

  1. Activate the Yeast:
    In a large bowl, combine warm milk, sugar, and instant yeast. Stir and let sit for about 5 minutes until the mixture looks foamy.
  2. Mix the Dry Ingredients:
    In a separate bowl, whisk together the flour and salt.
  3. Combine Wet and Dry Ingredients:
    Gradually add the flour mixture to the yeast mixture. Add the melted butter and egg, mixing until the dough comes together.
  4. Add Cheese and Jalapeños:
    Fold in the shredded cheese and diced jalapeños, ensuring they are evenly distributed.
  5. Knead the Dough:
    Transfer the dough to a lightly floured surface and knead for about 8-10 minutes until it becomes smooth and elastic. Alternatively, use a stand mixer with a dough hook for 5-6 minutes.

Step 2: First Rise

  1. Place the dough in a greased bowl, turning it to coat the surface with oil.
  2. Cover the bowl with a damp cloth or plastic wrap and let the dough rise in a warm spot for 1 hour, or until it has doubled in size.

Step 3: Shape the Rolls

  1. Once the dough has risen, punch it down to release air.
  2. Divide the dough into 12-16 equal portions (depending on desired roll size).
  3. Roll each portion into a smooth ball and place them on a greased or parchment-lined baking sheet or in a greased 9×13-inch baking pan.

Step 4: Second Rise

  1. Cover the shaped rolls with a damp cloth or plastic wrap.
  2. Let them rise for 30-45 minutes, or until they are puffed up.

Step 5: Preheat and Bake

  1. Preheat your oven to 375°F (190°C).
  2. Brush the tops of the rolls with melted butter for a golden crust. For added flavor, sprinkle extra cheese and top with a thin jalapeño slice.
  3. Bake the rolls for 18-22 minutes, or until golden brown.

Step 6: Cool and Serve

  1. Remove the rolls from the oven and allow them to cool slightly before serving.
  2. Brush with more melted butter for a glossy finish and extra flavor.
