Chicken Fried Rice Recipe. If you’re a frequent visitor to my site, then you already know I love to experiment with fried rice using different mixes, sauces, and even new ingredients to give our meals pizazz so the kids don’t get bored with their meals.

A friend of the family told me about  San-J No Soy Tamari and I told her I’d give it a try although I wasn’t really sure I’d like it.  My husband loves soy sauce and so do I.

How was it?

Let me just say, my husband still doesn’t know it wasn’t soy sauce free.  If I didn’t know it myself, I wouldn’t be able to tell as well.  The fact that it’s gluten-free and tastes amazing is the reason it’s now going to be my new staple when it comes to fried rice.

Ingredients:

2 tablespoons sesame oil
2 tablespoons vegetable oil
1 to 1 1/2 -pound boneless skinless chicken breasts
1 1/2 cups frozen vegetable blend (or you can even use fresh vegetables)
3 or more green onions (save some for garnish)
3 garlic cloves
4 cups cooked wild rice
3 to 4 tablespoons  San-J No Soy Tamari
A dash of salt and pepper

Directions:

· Add the sesame and vegetable oils and sliced chicken breast to a large non-stick skillet or wok. Then you will want to cook over medium-high heat for about 3 – 5 minutes or until all the pink is gone while occasionally flipping so all sides can cook evenly. The cooking time might be different based on the size of the type of chicken being cooked. After the chicken is finished you will want to move it out of the skillet onto a plate, however, be sure to keep the juices in the skillet.·

Add the vegetables, and green onions, then cook for about 2 – 3 minutes, or until the veggies are soft.

Then will you will want to add the garlic and cook for about 1 -2 minutes while stirring frequently.

After stirring the garlic in you will want to push the veggies to one side of the skillet so you can scramble eggs on the other side.

You will want to scramble the 3 large eggs. After scrambling mix the eggs with the veggies.

Combine the chicken, and rice, with the veggies and eggs. At this point, you should evenly drizzle Tamari Lite sauce, salt, and pepper. Then you should cook everything for about 2-3 minutes so the chicken, vegetables, eggs, and rice can blend together easily. Serve your plate and enjoy!
