Easy Breezy Chicken and Dumplings Recipe. Happy Sunday. I have something exciting to share with you today and what better way to celebrate exciting news than with a recipe?
We have a new granddaughter. She’s the first granddaughter. A new birth is always a reason to celebrate with food and family, but after three grandsons our first granddaughter needs a celebration as well.
After spending a couple of weeks spoiling her, we’re back home now and I want the celebration to continue. So, I decided to make my husband’s favorite meal. A big pot of fluffy chicken and dumplings. While I was making it, I decided to share it with you. I hope you enjoy it as much as we do.
It’s inexpensive and tastes out of this world. In fact, I think it would give Cracker Barrel chicken and dumplings some competition.
Chicken n’ Dumplings Recipe
INGREDIENTS:
3 to 4 chicken thighs
4 Cups of Water
green onions
celery
1 can or bag of frozen peas and carrots
OR 16 ounces of any kind of canned or frozen vegetables your family likes
3 cups of Bisquick / baking mix
1 1/2 cups milk
DIRECTIONS:
Boil chicken, celery, and green onions in four cups of water until the chicken is completely fully cooked.
Take chicken out and set to the side to cool.
Shred the chicken.
Drain a can of mixed veggies and pour in broth. Mix baking mix and milk in a separate bowl and stir until complete (will be a doughy thick mix).
Remove 1 cup of broth mix.
Turn broth and veggies on high and debone the chicken.
Once the broth is boiling add chicken then drop spoon-size dough and mix into the pan.
Turn down the heat to low and pour the remaining broth mixture on top.
Slow cook for ten minutes.
This makes a complete meal and can serve up to 6 people!
